Tomato Carpaccio & Stuffed Courgette Flower Recipe

Method:

  1. Whip the feta in a small food processor with lemon zest and yogurt and then add in mint leaves and a pinch of Aleppo chilli flakes. Season to taste.
  2. Slice your tomatoes thinly and arrange on a sharing plate. Drizzle with a good olive oil, balsamic vinegar and season with truffle salt.
  3. Sprinkle the tomatoes with a generous layer of micro chives, coriander and thyme. Top with burrata.
  4. Slice the burrata open carefully and cover with a selection of edible flowers.
  5. Stuff the courgette flowers carefully with the whipped feta and fry on a high heat for 1-2 mins in oil. Serve with a crisp glass of white wine.
