- 60% salt, 40% sugar mix (enough to cover the salmon)
- Earl Grey tea leaves
- Zest of 3 lemons + juice of 1 lemon
- Green apple (thinly sliced)
- Cream cheese
- Dill oil
- Bronze Fennel and Micro Red Amaranth for garnish
How to Make It
- Mix salt and sugar 60:40 ratio – enough to completely cover a salmon side.
- Add a generous portion of Earl Grey along with the zest and juice of the lemons.
- Wrap the salmon in cling film, and refrigerate for 15 hours to cure.
- Rinse the cure off the salmon with cold water, pat it dry, and slice.
- Arrange the cured salmon on a plate.
- Serve with a fennel and apple salad, cream cheese, dill oil and garnish with Bronze Fennel and Red Amaranth.
