Lemon Balm can be infused for a range of different ingredients such as teas, oils, marinades and more. To create a soothing Lemon Balm infusion, tear or chop the leaves to release their aromatic oils. Pour hot, but not boiling, water over the leaves. Allow them to steep for 5 to 10 minutes, depending on your taste preference for strength and flavour intensity. Once steeped, strain the leaves if necessary and savour its sweet, citrusy, and refreshingly zingy notes.
